Heavenly Mango Tapioca lives by its name, such a creamy dreamy dish this one is.

Who can resist them? They are such a treat for my sweet tooth. To my ever growing mango obsession is this mango sago. A delightful medley of sweet, tangy and creamy. There is a variety of sagu available with different flavors I have just started to shared hang on for more!

This is for sure one of the simplest and easiest recipes you can ever make. It only needs 4 ingredients mainly and is convenient for serving the crowd, as it can be prepped ahead of time. In fact, it tastes much better if you can wait for some time by chilling it for at least an hour so that the flavors had the chance to meld.

Firstly the mangoes then coconut milk/normal milk, sugar, sagu/tapioca and some water to boil the pearls.

Make sure the water is already boiling before you add in the pearls or else the pearls will dissolve at room temperature. The water ratio is 1:4 i.e. one cup of tapioca pearls and 4 cups of water. Cook it for about 20 minutes or until they are completely translucent. stir it occasionally so that they don’t stick to the bottom of the pan.once cooked separate the pearls from the water and run in under the cold water to prevent sticking with each other. This is the only process in this recipe which takes time to cook as well as the core ingredient, rest can be made with a breeze.

Now in a pan pour the 1 cup of coconut milk or normal milk to it add the sugar of about 1/4 cup cook it until the sugar dissolves and set it aside to cool. Now comes my favorite part make a pulp of 2 mangoes and dice up one mango slices and reserve them for the garnish. Once the pearls have had the chance to cool down add it to the milk cooked then the pulp stir well. garnish it with the sliced mangoes and you are good to go!
